RECIPES:
Buckwheat Chia Bread (this recipe is adapted from the Healthy Chef
1 3/4cup buckwheat groats
1/4 cup chia seeds
1 cup water
1 1/2 tbsp pizza seasoning
2 tbsp nutritional yeast
2 garlic cloves, minced
1/2 tsp salt
1 1/2 tsp baking powder
Soak buckwheat groats overnight or for at least two hours and strain.
Soak chia seeds in 1/2 cup of water for 10 minutes until they form a gel-like consistency.
Place all ingredients in blender, except garli and blend until it forms a thick batter. Add garlic.
If batter is too thick add extra water.
Place in a lined baking tray and cook for 60-75minutes in 165C.
This has a very different consistency to bread, of course, but it does the trick. It has a nutty flavour to it that goes great with anything. You could definitely make this a sweet bread by replacing seasonings with a tsp of cinnamon and some maple syrup.
Cannellini Dip
2 tins of cannellini beans
1/4 cup tahini
1 large bunch of basil
1 garlic clove, minced
Juice of 2 lemons
Salt and pepper to taste
Mix all ingredients in a food processor or high speed blender until smooth.
Seasoned Nuts
1/4 cup pepitas
1/4 cup sunflower seeds
1/4 cup cashews
Dressing:
1/4 cup tahini
1 tbsp pizza seasoning
Juice of 1 lemon
1-3 tbsp water
Generous sprinkle of nutritional yeast
Mix all ingredients together except for the nutritional yeast, adding the water 1 tbsp at a time until it becomes runny but still quite thick. Pour this over the nuts and seeds and mix until they’re covered. Sprinkle with nutritional yeast so that it covers the nuts completely (a little less than 1/4 cup).
Bake in the oven at 150C for 10-15min making sure to keep an eye on them because they can burn quite quickly!
Bliss Balls
10 medjool dates, pitted
1/4 cup pepitas
1/4 cup sunflower seeds
1/4 cup chia seeds
1/4 cup coconut
1/4 cup chopped dried mango
2-3 tbsp pumpkin butter
Zest of 1 orange
Juice of 1/2 an orange
Mix all ingredients in a food processor until it all starts to come together. Make sure not to over-blend and leave some chunky bits. Roll into balls.
