INGREDIENTS:
2 cups whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon kosher salt
2 large eggs
1/3 cup honey
1/3 cup coconut oil
130 gram, 5 Oz (1/2 cup) greek yogurt
2 teaspoon pure vanilla extract
2 medium zucchini
1/2 cup chopped walnuts

INSTRUCTIONS:
1. Grate the zucchini. Chop the walnuts; set aside.
2. Preheat the oven to 340°F (170°C), and place baking paper on a 9 inch loaf pan.
3. In a small bowl, combine whole wheat flour, baking soda, baking powder and kosher salt. Mix and set aside.
4. In a large bowl, add 2 eggs and whisk. Add honey, coconut oil, greek yogurt and pure vanilla extract. Whisk.
5. Add the dry ingredients and mix until well combined.
6. Add the grated zucchini and the chopped walnuts to the batter. Mix gently.
7. Pour the batter on the baking sheet.
8. Bake for 40-50 minutes or until a tester inserted into the center comes out clean.
9. Let it cool in the pan for at least 20 minutes. Slice and serve. Enjoy 🙂

* You can use all purposed flour instead of whole wheat flour.
* You can place chocolate chip instead of walnuts.
