Finger Sandwiches

Ingredients
Mayonnaise – 4 tablespoons
Mixed herbs – 1/2 teaspoon
Grated carrot – 25 grams
Chopped yellow capsicum – 20 grams
Chopped green capsicum – 20 grams
Chopped red capsicum – 20 grams
Salt – 1/2 teaspoon
Black pepper – 1/2 teaspoon
Bread slice – 2
Butter
Mayonnaise mix
Sliced tomato – 4
Black olives

Preparation
In a mixing bowl add mayonnaise, mixed herbs, grated carrot, chopped yellow capsicum, chopped green capsicum, chopped red capsicum, salt and black pepper. Mix well.
Take 2 bread slices and trim sides. Spread butter over each slice of bread. Spread prepared mayonnaise mix stuffing. Place slices of tomato over stuffing. Cover with another bread slice and cut pieces. Add cut black olive on top.
