Shakshuka is a great Vegetarian dish (eggs in spicy tomato sauce) that uses simple ingredients and is healthy, easy and satisfying. It is made out of tomatoes and poached eggs and is a great one skillet dish that is packed with flavor. Many enjoy it for breakfast with warm pita bread but it can be enjoyed any time of the day (even dinner). This video will show you how to make tasty shakshuka easily at home using fresh tomatoes.

Shakshuka Recipe (Vegetarian Healthy Breakfast)
2 TBSP olive oil
1 onion (diced)
4-6 cloves of garlic (pressed)
1 red bell pepper (chopped)
6 medium tomatoes (chopped) (or 28oz canned tomatoes)
6 large organic eggs
2 TBSP mina harissa sauce (from thrive market – link below)
1 tsp cumin
1 tsp paprika
1 tsp smoked paprika
½ tsp chili powder
½ tsp coriander
½ tsp red pepper flakes
s&p to taste
Fresh parsley (chopped) for garnish
Heat oil over medium heat and saute onion for a few minutes. Add in garlic and stir. Add bell pepper and saute until soft for about 5-7 minutes. Add spices and stir. Add tomatoes, stir and cover with a lid for about 10 min. Uncover, stir, add mina harissa and simmer a few minutes more. Make wells and carefully crack an egg in each well. With a spoon gently spoon the sauce over the egg whites to help them cook faster without overcooking the yolks. Lower the heat, cover and cook for 5-10 minutes. Add s&p to the eggs and garnish with fresh parsley. Enjoy with warm pita bread.
