A green salad is a great way to get fresh vegetables into your diet. But does your salad look and taste the same day after day? It might be time to “turn over a new leaf” and add some new greens to your repertoire.

Leafy greens are sometimes taken for granted—one tastes pretty much like another, right? In truth, the flavors and textures vary quite a bit. Adding some crisp, peppery arugula or maybe some tender watercress leaves can greatly enhance the flavor of your salad. Try mixing two or three varieties for a really satisfying result.

Registered dietitian Susan Bowerman has five different salad greens she likes to use in her daily salads, along with a simple dressing of olive oil, lemon juice, salt and pepper. Here are just a few:

Arugula: These leaves have a nice peppery bite to them. They add lots of texture and flavor when combined with subtler greens.

Red butter lettuce: This lettuce is very tender and lends a beautiful red color as contrast to other greens.
