Healthy Minestrone Soup recipe, packed with lots of veg.
This can be made vegan or veggies by taking out of replacing the animal products with plant based alternatives.
This recipe is can be altered depending on the veg you want and how much you want. Also any herbs and spices can be swapped out for your favourites.
My recipe served about 4-6 people. with smaller servings it’s great pairing with a nice slice of bread. Also the type of pasta used can be any of your choice.
Recipe:
2 sticks of celery
1 carrot
1 leek
1 can of chopped tomatoes
Veg stock cube, with about 1litre
300g of pasta
Garlic paste
Salt and pepper
1 tsp of oregano
1 tsp of paprika
1 can of Cannelinni beans
Couple of leaves of a savoy cabbage
Chorizo
Cheddar cheese (parmesen cheese would be good)
Method:
– Fry veg until soft
– Add liquids
– Add pasta
– Boil for about 8 mins
– Simmer to reduce liquid
– Add seasoning
– Add beans
– Add cabbage
– Ensure consistency is thickened
– Add chorizo
– Serve with cheese and bread
