Ingredients:
– Brussel Sprouts
– 1 Tsp. coriander seeds
– 1 Tsp. cumin
– 1 Tsp. black sesame seeds
– Salad Greens (Rocket, Watercress & Sorrel)
– Pine nuts
– Tahini
– Sumac
– Sliced red chilli

Method:

1. Cook Brussel Sprouts:
– Chop Brussel Sprouts in half
– Season with salt & drizzle with oil
-Bake in oven for 25 minutes at 200 degrees centigrade

2. Add Spice
– In a dry pan roast 1 Tsp. coriander seeds, 1 Tsp. cumin & 1 Tsp. black sesame seeds for 30 seconds
– Add olive oil and then your Brussel Sprouts
– Stir to coat

3. Assemble Salad
– Chop and add Rocket (Arugula), Watercress & Sorrel to a bowl
– Add Brussel Sprouts on top
– Top with pine nuts, tahini, sumac & sliced red chilli
