Want to have something light for dinner? Chef Pranav Joshi has quite the recipe for that. The Broccoli Soup is perfect for the healthy light dinner and it’s so tasty you will love it even if you don’t love broccoli!

Ingredients:
1 big bunch of Broccoli
5-6 Garlic cloves
1 tbsp Olive Oil
1 tbsp butter
1 cup vegetable stock
Salt to taste
Black pepper powder to taste
3-4 basil leaves
1/2 cube Grated cheese

Method:
Chop the broccoli and put it in some warm water.
Let it boil.
Chop some garlic and keep it aside.
Once the broccoli water is boiled strain it and keep it aside too cool.
In a pan, add olive oil, butter, chopped garlic and saute.
Then add the broccoli and the vegetable stock and puree the mixture.
Once pureed, boil the mixture and season with salt and pepper.
Garnish with some chopped basil leaves, pepper and cheese.
Serve Hot!
