This soup is incredibly easy to make, and is full of flavour. This soup only has 85 calories per cup, and is really filling. You can either have it as an appetizer or make it a meal.

Healthy and Easy Low Cal Soup for Lunch | Weight Loss

2 tbsp Olive oil
2 tbsp Butter
2 tbsp Flour
Salt pinch
Nutmeg pinch
Pumpkin Spice
Pepper
1 chopped Onion
1 tsp Garlic
2 cups Chicken stock or vegetable stock
1 cup Milk of choice, I used low fat regular milk
1 head Cauliflower chopped

In Large pot add olive oil and butter. Melt then add flour. Add spices, and mix. Let everything cook until bubbly brown and there is no more flour smell. Add onions and let cook for a few minutes. Add garlic. Add 2 cups chicken or vegetable stock. Cook for a few minutes, then add milk. Add cauliflower. Cook until done. Mine took 15 minutes. Then blend the soup with a hand blender or a regular blender. This soup is thick. You can add more broth and milk to make it more thin if you don’t like yours thick. I added croutons to my soup.
