Cauliflower Breadsticks
Ingredients:
– 1 medium head of cauliflower
– 4 eggs
– 4 cloves garlic, minced
– 1 Tbsp dried Italian herbs
– 2 cups of shredded cheese
– ½ salt
– ¼ tsp ground pepper
– 1 additional cup shredded mozzarella cheese for topping
Serve with marinara sauce or any other desired dipping sauce
– Preheat oven to 375F.
– Chop the cauliflower and process in a food processor until “rice”
texture ( don’t mash) or use a simple box grater, that will do the job nicely too.
– Place 4 cups of riced cauliflower in a microwavable bowl, and
cover with plastic wrap.
– Microwave for 10 minutes, or until the cauliflower is tender.
– When the cauliflower is done, remove the plastic wrap and let cool a
bit.
– Line a bowl with a linen kitchen/tea cloth and squeeze as much
liquid as you can out of the cauliflower dough.
– Add the eggs, 2 cups of cheese, Italian herbs, garlic, salt, and pepper
to the cauliflower dough and stir to combine.
– Transfer it onto any baking sheet lined with parchment paper.
– Form a rectangle and press a little bit with the spatula and make the
edges straight.
– Bake for 20-25 minutes, or until golden brown.
