FRITTATA WITH SWEET POTATOES

-300g sweet potatoes
-250g broccoli
-200g ricotta or low fat cottage cheese
-50g parmesan
-6 eggs
-1 handful of fresh parsley
-1tsp black pepper (to taste)
-1tsp dried Italian spices (basil, oregano…)
-pinch of salt (to taste)
-olive oil spray
Sort out the broccoli on its roses and simmer until soft. Then cut into small pieces. Peel the sweet potatoes and cut them into small pieces as well. Then fry in a small oil, in a pan, over medium heat until soft. Stir in the broccoli and sweet potatoes. Mix together ricotta, eggs and the half of grated parmesan. Add salt/pepper to your taste. Then add to the broccoli-potato mix and mix everything thoroughly. Finally, pour into a frying pan, sprinkle with chopped parsley, spices and the rest of parmesan, and fry until golden brown at 180 degrees at about 20-25 minutes. Many people like to serve it cold as a “quiche,” but I love it warm and fresh. Cook with Love and Bon Appetit!
