Join Aneesa in the Offbeet Kitchen today as she shares a super easy and delicious lentil salad recipe. This is a great salad to keep on hand in the fridge for easy plant based lunches. This lentil salad is tasty and filling and can also be had on the side with meals.
Our lentil salad is completely vegan and gluten free and comes together quickly and is packed full of flavour all while being rich in protein, fibre, vitamins, and minerals. It is a great recipe to have in your regular rotation.

Recipe:
Vinaigrette Ingredients:
1 cup black or green lentils, cooked
1 tbsp dijon mustard
1 tbsp tamari
2 tbsp extra virgin olive oil
2 tbsp light balsamic vinegar or red wine vinegar
1 tsp maple syrup
1/3 cup finely chopped red onion or shallot
Salad Ingredients:
1/2 cup chopped green olives
1 to 2 chopped tomatoes
1 cucumber, chopped
1 cup dry black or green lentils (cook according to package directions)
salt and pepper to taste
Mix vinaigrette ingredients in a bowl.
Add salad ingredients ingredients in a large bowl and toss with the vinaigrette.
Add salt and pepper to taste.
Serve over a bed of mixed greens for a complete lunch.
