Wholesome sandwiches stuffed with grilled chicken.

GRILLED CHICKEN SANDWICHES

Ingredients

2 boneless chicken breasts
8 multigrain bread slices
7-8 fresh parsley
7-8 fresh basil leaves
7-8 fresh thyme
1 teaspoon red chilli flakes
Salt to taste
1 tablespoon chopped garlic
Crushed black peppercorns to taste
1 teaspoon olive oil + for brushing
1 teaspoon lemon juice
1 medium green capsicum

Method

1. Finely chop fresh herbs.
2. Transfer them into a bowl, add chilli flakes, salt, garlic, peppercorns, lemon juice and mix well. Add little olive oil and chicken. Rub the marinade over the chicken. Set aside for 5-10 minutes.
3. Heat remaining olive oil in a non-stick grill pan, put the marinated chicken and cook on high heat till grill marks appear on both the sides.
4. Put the grilled chicken over the foil paper and wrap. Put the baking tray in the oven and bake for 5-7 minutes.
5. Cut capsicum into thin strips. Shred the baked chicken and transfer into a bowl.
6. Place a spoonful of the chicken mixture on one side of the bread side, cover with remaining bread. Brush little olive oil and grill in the griller till crisp and brown on both the sides.
7. Cut into small pieces and serve immediately
