– 1/2 A medium onion
– 10 Grape tomatoes
– 1/4 Cup spinach
– 1 Boiled egg
– 1 Tsp Dijon mustard
– 1 Tsp olive oil
– 1 Tsp white vinegar
– Salt and pepper to taste

CHICKPEA AND SPINACH SALAD:
– 1 Cup spinach
– 1/3 Cup chickpeas
– 2 Slices of whole grain bread (For croutons)
– 1 Tbsp corn
– 1 Tsp lemon juice
– 2 Tsp olive oil
– Salt and pepper to taste
