I began my paleo diet journey 4.5 months ago and I’ve already seen drastic changes in my weight, my skin, my energy levels and my hormones/emotions! Discovering paleo baking has been one of the most exciting and fulfilling times in my life so far. I hope you enjoy it as much as I do!

Coconut Banana Bread

Ingredients:

-1/2 Cup Coconut Oil
-1/2 Cup Honey
-3/4 Tsps Salt
-6 Eggs
-2 Tbs Vanilla Extract
-3/4 Cup Coconut Flour
-2 Bananas, Mashed
-2 Tbs Shredded/Desiccated Coconut (I used more like 5 Tbs)

Directions:

1. Preheat oven to 350 F
2. Mix coconut oil & honey in a small bowl
3. Wish eggs, salt & vanilla together in a larger bowl
4. Add the honey/coconut oil mixture into the egg mixture in the larger bowl
5. Whisk in the coconut flour, bit by bit to avoid clumps
6. Mash bananas in a small bowl and then mix into the rest of the ingredients in large bowl
7.Grease a 8″ x 4″ bread loaf pan and add in mixture into pan
8. Bake for 45 minutes or until a toothpick comes out clean
9. Let cool for 20-30 minutes
10. Enjoy!
