A super easy recipe for a healthy snack that the entire family will love! Oat & Pecan energy bars made with just 6 ingredients! They are delicious, plant based, made with no refined flour or sugars. These energy bars are so yummy!
INGREDIENTS
* 150 gr extra thick gluten free rolled oats [1.5 cups + 2.5 tablespoons of rolled oats]
* 50 gr pecan nuts [8 tablespoons of pecans]
* 5 ml pure vanilla extract [1 teaspoon]
* 130 gr honey [4.5 oz]
* 5 gr cinnamon [1 teaspoon]
* 30 ml coconut oil [2 tablespoons]
Preheat oven to 350 degrees F [180 degrees C]. On a baking sheet, toast the oats for about 10-15 minutes, stirring occasionally. Once ready, they should look lightly browned. Transfer the oats to a bowl. In a separate smaller bowl, combine the honey, cinnamon, and the vanilla extract and mix together. Pour this mixture over the oats and stir well until the oats are covered with the honey mixture evenly. Pour the oats in a flat baking pan previously covered by parchment paper, create an even layer. Bake again for about 3-5 more minutes. Let the oats cool outside of the oven for at least 1 hour.
