*Vegan Date Squares*

Crust:
1.5 cups whole raw almonds
1.5 cups regular oats (for Gluten-free, use GF oats)
1/2 tsp kosher salt
10 Medjool dates, pitted and roughly chopped
1/4 cup coconut oil

Date filling:
25 Medjool dates, pitted and roughly chopped (~2.5 cups)
1/2 cup water

*Chia Energy Bites*

1 cup rolled oats
½ cup nut butter (I used a mixture of peanut and cashew)
3 tbsp honey
2 tbsp desiccated coconut
1 tbsp chia seeds
½ tsp vanilla extract
To decorate: 20g dark chocolate

*Linguine with Arugala, Parmesan, and Garlic*

12 ounces linguine or other dried pasta
3 Tablespoons olive oil or butter
7 cloves garlic, peeled and thinly sliced
2 very large handfuls (about 5 ounces) baby arugula
1/2 cup freshly shredded or shaved Parmesan, plus extra for topping
(optional: 1/3 cup toasted pine nuts)

*Coconut Flour Pancakes*

3 Tbs. coconut flour
3 eggs
2 Tbs. unsweetened applesauce
1 Tbs. melted butter or coconut oil, plus extra for the pan
3-4 Tbs. coconut milk
1/4 tsp. baking soda
1/4 tsp. apple cider vinegar
