-150g honey
-100g coconut oil
-3 eggs
-1/4pcs baking soda
-250g almond flour (or finely chopped almonds)
-250g rice flour (brown)
-pinch of salt (to taste)
-2tblsp gingerbread spice mix (see recepie below)

Melt the honey with the oil, stir in the eggs.
Mix the dry ingredients and then combine the two mixtures.
Knead the dough and put it in the fridge for at least an hour.
Roll out the dough not too thick, and here we go, just press out the shapes.
You can decorate it with raisins, nuts, muesli, sesame seeds, coconut flakes.
Put it in a baking tray and bake it in a preheated oven at about 10 minutes on 160 degrees.
