Ingredients:
Wheat Flour – 2 & 1/2 Cups
Extra Wheat Flour for dusting – 1 Cup
Potato – 3
Salt
Onion – 1 (if big)/ 2 (if small)
Coriander Leaves – 1/2 cup
Ginger Garlic Paste – 1 tbspn
Green Chilli – 1
Ghee (Clarified Butter) – Optional
Spices:
– Turmeric Powder – 1/2 tspn
– Red Chilli Powder – 1/2 tspn
– Coriander Powder – 1 tspn
– Cumin Powder – 1 tspn
– Garam Masala – 1 tspn
– Chat Masala – 1/4 tspn
– Amchur (Dried Mango) Powder – 1/2 tspn
Preparation:
1. Boil potatoes in water until they are fork tender.
2. Transfer Potatoes to a bowl to cool and peel of the skin.
3. Mash the potatoes properly using a fork.
4. In a bowl take 2 & 1/2 cups of wheat flour and knead it until it’s soft and not sticky. Cover and let it rest for at least 10 mins.
5. Chop onions & coriander leaves into small pieces
6. Make a paste of ginger, garlic and green chilli in a mortar & pestle or blender
7. In a pan add oil (2 Tbspn) and add the paste of ginger, garlic & green chilli
8. Saute until raw smell of ginger & garlic is gone
9. Add chopped onions and 1 tspn of salt
10. Suate until the onions turn translucent
11. Add Turmeric Powder, Red Chilli Powder and Coriander Powder. Mix well
12. Add mashed potatoes and mix well
13. Add Cumin powder, Garam Masala, Chat Masala and Amchur. Mix them well
14. Add chopped coriander leaves and mix them
15. Transfer the potato mix to a bowl and let it cool
16. Make medium sized balls out of the wheat dough
17. Take one dough ball and gently press it between your palms
18. Using a rolling pin roll the dough gently from the edges keeping the mid section thick
19. Fill in 1 Tspn of potato mix into the rolled dough and close in the edges keeping the mix in.
20. Press the dough between your palms and roll again using the rolling pin
21. Roll until the dough is thin and the potato mix is visible from outside.
22. Put the rolled dough in to a heated pan
23. Flip once you see small bubbles
24. Apply ghee over it
25. Flip and apply ghee again on the other side
26. Once you see even brown spots on both sides, you can take off the bread out of the pan.
