This is a lovely light and healthy recipe with Quinoa and chicken. You can make it vegetarian by skipping the chicken and adding a bunch of vegetables or perhaps paneer or cottage cheese.

Ingredients –

500 Grams Chicken Legs
1/2 Cup Quinoa
1 Cup Chicken Stock/Broth
1-2 Lemons
1/4 Cup Chopped Coriander
1 Cup American Corn
1 Teaspoon Chilli Flakes
1 Teaspoon Mixed Herbs
Salt
Pepper
2 Chillies
6-7 Garlic cloves
Olive oil
