Preparation
Heat 10 ml of oil in a pan. Put in the pieces of an onion and saute till golden brown. Put in 6 shallots and saute and mix well. Add a spoon of fennel seeds and a spoon of caraway seeds and saute and mix well. Add 25 gms of garlic and 25 gms of ginger and saute and mix thoroughly. Add 3 red chillies and mix well. Add the pieces of one tomato and saute and mix well. Add the pieces of 250 gms of Ash gourd and mix thoroughly. Add 150 gms of cottage cheese cubes and mix and saute well. Add 250 ml of Coconut milk and mix thoroughly. Let the mixture cook for 8 minutes if in a pressure cooker and 25 minutes in an open pan. After cooking for the required time add a cup of washed and soaked rice and mix well. Cook for a further 5 minutes if in a pressure cooker or 15 minutes if in an open pan. Take off the flame and serve
