Hello everyone!

I wanted to share two super easy to make no waste healthy meals with you today. I hate food waste so these meals are great because you can use whatever veggies you have on hand. I’m going to continue to do my fresh veggie inventory so I can eliminate food waste this year! Anyone else doing this as a new year resolution or goal?

The veggie spring rolls in this video are loaded with yummy and healthy fresh veggies. I add rice noodles and you can also add tofu if desired. This recipe is my go to because I know I can use up pretty much anything in my fridge in these handy wraps. It’s also a great meal to make and pop into the fridge so that the kids can snack on while they spend the day remote learning/ home schooling. I think they would be super handy for my work at home friends as well. Make extra for the next day and lunch is taken care of!

My second meal is Polenta with mushrooms and a healthy & filling salad. I like to add in any extra veggies I have lingering in the fridge into a fresh salad. When looking for Polenta at the grocery store just be sure to make sure to look for non GMO and no added oil on the label. Corn is unfortunately one of those starches that we must be careful with because it’s genetically modified. My favourite veggies to pair with Polenta is mushrooms and by pan frying them in water I’m keeping my calorie density low. You don’t need oil to make them taste good. This will only add unnecessary calories to the meal. Add water or broth, and herbs and spices to them and they will taste amazing!
