Paneer is one of those ingredients that makes every dish a family favorite. The golden crisp buttery toast, rich paneer texture, freshness of the mint and the crunchy onions hits your senses and leaves you with a satisfying experience. It’s a hit among all ages and my kid loves this with a dab of ketchup.

Makes 5 – 6 sandwiches

Cook Time – 5 mins

Ingredients
Pudina/Mint leaves – 40 gms
Coriander leaves – 120 gms + 1/2 cup
Ginger – 1 inch
Garlic – 3 pods
Salt
Jeera/Cumin – 1/2 tsp
Tamarind – 1 small lemon size
Jaggery – 1 tsp
Green chili – 4
Paneer, crumbled – 1 1/2 cup (160 gms)
Fresh bread
Green chili, crushed – 1 tsp
Onions, chopped – 1/2 cup
Butter

Method
Preparation of green chutney
Take Pudina leaves, coriander leaves, ginger, garlic, salt, cumin, tamarind, jaggery and green chili in a blender and blend it well. Keep it aside.

Preparation of paneer stuffing
Take crumbled paneer, finely chopped onions, crushed green chili, salt and finely chopped coriander leaves a bowl and combine well.

Preparation of paneer sandwich
1. Take two fresh bread slices and apply butter on both sides and prepared green chutney. Place paneer stuffing and toast the bread in a pan or a griddle until golden brown.
2. Enjoy your sandwich with tomato ketchup, mayonnaise or green chutney.
