These were super delicious, and filling can be served as a dinner of lunch
Ingredients
Oil
1 Green onion
1 medium Carrot
4 Tomatoes
1 small bell pepper
2 tbsp Tomato paste
Salt
1 Tbsp Curry powder
1 Tbsp Cumin
1 Tsp chilli flakes
1 Tbsp Garlic powder
1/2 kg mince
1/3 cup Water
Handful spinach
1/2 chicken stock cube
1 Tbsp Honey
2 tbsp paprika
2 Large Bell pepper
Mozzarella
Method
Preheat your oven before starting
In a hot oiled pan
add the green onions fry until soft
Then add the carrots, tomatoes, and bell pepper fry until the carrots are partly soft.
add the tomatoes paste, salt, curry powder, cumin, chilli flakes.
Mix it all in then add the mince, mix all the seasoning into the mince then add the water and spinach.
Cook until the spinach wilts down and the mince is fully cooked.
add the chicken stock cube, and honey, mix it for a minute.
Then taking your bell pepper slice them in half, oil the inside and outside of them,
then fill the bell peppers with mince, and top with mozzarella,
place in the oven for 10 – 15 minutes or until the mozzarella has melted.
