Vietnamese Spring Rolls
I just love making these at home, you can fill them whatever you want (pls don’t put a cheese cake in it). & its really healthy & filling, Vietnam has been on my list of places to travel for a while & I will definitely be exploring more of Vietnamese cuisine at home so stay tuned.

Ingredients
For the paneer
250 gm cubed paneer
2 tbsp red curry paste
3 tbsp oil
2 tbsp for frying
Other ingredients
1 cup julienned carrots
1 cup julienned radish
1 cup julienned raw mango
1/4 cup sliced spring onion whites
1/4 cup spring onions greens
1/4 cup crushed salted peanuts
For the wrappers
Water
1 pkt rice paper
For the peanut dip
2 tbsp peanut butter
1 tso soy sauce
Juice of half lemon
1 chopped chilli
1 tsp chopped spring onions
