Easy, Healthy, Moist Lemon Bread recipe with Cream cheese Icing.

Ingredients:

1 Cup Almond Milk
1 Cup Sugar
1/2 Cup Lemon Juice
1/4 Cup Melted Coconut Oil
1 tsp Baking Soda
1 1/2 tsp Baking Powder
2 1/4 Cups AP Flour

Cream Cheese Icing:
1 1/2 Cups Powdered Sugar
1/4 Cup Butter (softened)
4oz Cream Cheese
1/2 tsp vanilla

Directions:

1. Preheat oven to 375* and grease a 9×5 loaf pan.
2. Mix almond milk, sugar, lemon juice, coconut oil, and vanilla. Then, add in baking powder and baking soda. Mix. Quickly add in the flour, mix, but do not over mix.
3. Pour the batter into the prepared loaf pan. Bake for 40-45 mins.
4. While the cake is baking, use a electric hand mixer to make the icing. Combine the butter and cream cheese. Add the vanilla. Add the powdered sugar 1/2 cup at a time until combined.
5. When the cake comes out of the oven, top the cake with half of the icing. Save the rest of the icing for later. Let the cake cool and enjoy!
