EASY LUNCH AND DINNER RECIPES | HEALTHY BUT DELICIOUS | Cook Clean And Repeat
Greek Salad Dressing
1/4 cup Extra Virgin Olive Oil
2 tbsp Red Wine Vinegar
1/2 tsp Dijon Mustard
1/2 tsp Oregano
Salt & Pepper
Mix ingredients and store in air-tight container.
*1 tbsp = 4 points on ww purple.
Taco Pie (Makes 4 HUGE servings!)
3 Fajita sized flour tortillas (I use La Banderita)
1 pound 99% lean ground turkey
1 can low fat La Preferida Black Refried Beans
1 small can green chilies
1 packet taco seasoning
1 cup Velveeta Shreds (or any shredded cheese)
Preheat oven to 350. Brown ground turkey. Add black beans, green chilies, and taco seasoning. In pie dish, place 1 tortilla in the bottom. Then, add 1/3 of meat mixture on top. Sprinkle small amount of cheese. Repeat layers 2 more times NOT adding cheese on top…yet. Bake for 15 minutes. Add remaining cheese and bake additional 5 minutes until cheese is melted. Serve warm with your favorite taco toppings!
