Ingredients:
1½ cups chopped mixed vegetables (carrots, green peas, cauliflower )
100 gram Tofu (made from soy milk) cubes
For the makhani gravy
4 medium sized finely chopped tomatoes
2 medium sized finely chopped onions
1 tsp finely chopped garlic (lehsun)
1 tsp finely chopped ginger (adrak)
2 cloves (laung / lavang)
1 stick of cinnamon (dalchini)
1 tsp mustard oil
1 tsp cumin seeds (jeera)
1 tsp dried fenugreek leaves (kasuri methi)
1 tsp chilli powder
1 tsp sugar
1 tsp turmeric powder
Salt to taste
1 tsp cornflour dissolved in 4 tsp water
For the garnish
1 tbsp finely chopped coriander (dhania)
