Chinese Tea Egg Recipe (Cha Ye Dan)
Marbled tea eggs are a popular, yummy, and nutritious snack any day of the year, but a Chinese New Year menu wouldn’t be complete without these tasty treats! You will want to save this #kidsfave to add to your #healthysnack arsenal – it’s always a family hit!
Ingredients:
6 to 8 eggs
Soy sauce (about ¾ cup)
Star anise (3 or 4 pods)
Cinnamon stick (or 2 tsp cinnamon)
Sugar (about 1 tbsp)
Black tea leaves (optional)
Dash of salt (optional)
Black pepper (optional)
Sichuan peppercorn (optional)
Mandarin orange peel (optional)
Boil 6 to 8 eggs for 10 minutes. Remove and run under cold water until they are cool enough to handle. Crack the shells by tapping with the back of a spoon until evenly cracked all over. Fill the pot with boiling water, enough to cover the eggs. Add cinnamon, soy sauce, sugar and star anise. You can add some or all the other ingredients if you like. Bet you’re surprised that the tea in tea eggs is optional! We leave it out if kids will be eating these because of the caffeine.
Simmer for about 40 mins. Let cool, cover with a lid and let them steep in the fridge for a few hours to overnight. The longer they steep, the tastier! Enjoy!
