Bangkoang Char or Stir Fry Jicama with Yam Bean is Traditional dishes prepare during Festive Month especially during Chinese New Year. This is Chinese popular dishes among Hokkien People, Nyonya and Northern part of Malaysia. The main ingredients of this dishes is Jicama, Carrot, Dried Shrimp&Shredded Dried Squid .

Jicama is low in calories but dense in nutrients. This makes it is an ideal choice for people wishing to lose weight while still getting a healthful balance of vitamins and minerals. Jicama also contain a good source of fiber, low glisemix index, probiotic, Antioxidant(Good source of vitamin C and many more. Jicama is a good carbohydrate choice for people with diabetes or person who taking low sugar diet.

Here is one of the tasty recipe that you can add into your diet from now on.

BANGKOANG CHAR / SENGKUANG GORENG /STIR FRY JICAMA@YAM BEAN RECIPE

TOTAL TIME : 30 MINUTES

INGREDIENTS

* 2 pcs Jicama/Yam Bean/Bangkoang /Sengkuang
*1 pcs Carrot / Lobak Merah
*6 pcs Shitake Mushrooms /Cendawan Shitake
*2 handfull Dried Shrimp / Udang Kering
*Shredded/Slices Dried Squid/Juhu/Hirisan Sotong Kering
*2 bulb Garlic /2 Lawang Bawang Putih
*250ml Water
* 1/2, cup cooking oil /Minyak Masak
*30ml Light Soy Sauce / Kicap Cair
*2 tsp Black Pepper Powder /Serbuk Lada Hitam
*1 tsp Chicken Stock Powder (chicken stock powder and chicken stock cube have different taste, the cube more salty while the powdered more to sweet) so please be Cafe full if you are using Cube… for healthier version u can skip this

HOW TO COOK

1)Peel the garlic can refer in the video. Smash n finely chop the garlic
2)Peel Jicama/Yam Bean & Carrot. By using grated tools shredded/Julienne the Jicama&Carrot
3)Slice the shitake mushrooms thinly
4) Heat up pan, put in Dried Shrimp and fry without oil.
5)Then put in the blender and blend
6)Again heat up the pan… Pour in cooking oil
7) Once the cooking oil hot enough put in garlic fry until golden brown
8)Then put in Dried shrimp then follow with Slice Dried Squid.
9)Stir evenly
10)Add in mushrooms
11)Stir and then add in Jicama@yam bean, carrot
12)Add in water to avoid burn on the bottom layer
13)Stir thoroughly.
14)Close the lid and cook the jicama until soften, repeat the process until you get the soft texture then season with light soy sauce,black pepper powder and continue add in chicken stock powder
15)Keep on stirring from time to time.
16)cook until the jicama is soften
17)Bangkoang Char now is DONE. Transfer to serving bowl.
18)Bangkoang Char can be eaten just like that, with rice or can be wrapped with salad or lettuce.
