FULL RECIPE:
INGREDIENTS (2 dishes):
Salad ingredients:
1 or 2 chicken breasts, cooked and diced
1 large or 2 small cucumber, sliced and diced
10 yellow cherry tomatoes, sliced
10 red cherry tomatoes, sliced
1/4 red onion, Cut into strips
1/2 large avocado or 1 small avocado, peeled and diced
2 small carrots, peeled and grated
Sauce ingredients:
2 tablespoons olive oil
1 small lemon, squeezed
1/4 teaspoon salt
1/4 teaspoon black pepper
INSTRUCTIONS:
1. In a small bowl, place all the ingredients for the sauce: olive oil, squeezed lemon, salt and black pepper. Mix well.
2. In a large bowl add the diced vegetables: cucumber, cherry tomatoes, red onion and carrots.
3. Pour the sauce over the vegetables and mix well.
4. Transfer the salad to 2 serving bowls. Add the diced avocado and diced chicken breast to the serving bowls. Enjoy 🙂
COMMENTS/ UPGRADES:
• For those who want a little more carbs in the salad, you can bake sweet potatoes cut into squares in the oven and add to the salad.
• you can add Kalamata olives to the salad.
