This recipe is a classic and a very quick way to get a comforting meal ready in short amount of time. The sandwich can be eaten in breakfast, brunch or even dinner with coffee or juice. It’s healthy if you are trying to loose weight as there’s no artificial mayonnaise added. If you want to make this even more hearty and delicious than it is, add finely diced pickles with spinach.
Ingredients
6 eggs
Handful of baby spinach
2 celery stalks
3 green onions
8 slices of bread
1/2 cup yogurt (~4 tbsp.)
2 tsp freshly squeezed lemon juice
1/2 tsp yellow mustard
Salt, according to taste
Black pepper, according to taste
