Curry is by far one of my favorite foods out there! I used to order curry out ALL the time, but I have embarked on making it by myself. I am pretty happy with the outcome of this recipe!

1)Cook jasmine rice if you want to add that to your meal.
2) Heat 2 skillets with about 2-3 tablespoons of oil on medium high heat.
3)Chop all your veggies-potatoes (baked them prior to recipe or microwave for 4 minutes), broccoli, carrots, bell peppers.
4)Cut tofu into triangles.
5) DIce garlic and ginger.Add 3-5 garlic cloves to saute pans.Add Ginger After 1-2 mins, add tofu to one pan.Saute until golden brown. ( about 1 tablespoon of ginger)
6) Add veggies to the other saute pan once your tofu is almost done. Season with ginger, garlic, salt and pepper. Cook for 5 minutes.
7) Heat up coconut milk in a pot. Add 3/4 – 1 cup of flour. whisk A LOT. Add paprika, turmeric, curry powder, black pepper, ginger. (about 1 tablespoon of seasoning for each spice). You can also add soy sauce here, or curry paste.
8) After about 5 mins, add vegetables to your coconut milk. Stir and season as you taste it.
9) Serve with rice!
