Hi Everyone! Today I have a toddler freezer meal video. These are so convenient to have on hand for those busy days or just to have healthy meals for your little one ready in less than a minute! These easy muffin tin sized portions are perfect for toddlers and have saved me time and time again when we need a quick healthy convenient meal! Hope you guys enjoy the video!

Recipes:
Chicken Broccoli Brown Rice Cups:
Ingredients:
– 2 eggs
– 1 cup broccoli (raw and grated or chopped and steamed)
– 1 cup cooked brown rice
– 1/2 cup shredded cheddar cheese
– 1 cup shredded chicken (small enough pieces for baby)
Directions:
– Preheat oven to 350°F
– Mix all ingredients in a large bowls and scoop into a greased non stick muffin tin.
– Cook in a 350°F oven for 20-25 minutes or until cooked through. Let cool.

Zucchini Sweet Potato Egg Cups:
Ingredients:
– 1/2 lb grated sweet potato
– 1/2 lb grated zucchini
– 6 eggs
– 1/2 cup shredded cheddar cheese
Directions:
– Preheat oven to 350°F
– Mix all ingredients in a large bowls and scoop into a greased non stick muffin tin. (Squeeze liquid from zucchini before adding)
– Cook in a 350°F oven for about 25 minutes or until cooked through. Let cool.

Whole Wheat Banana Muffins:
Ingredients:
– 1 lb mashed overripe bananas (about 4 medium bananas)
– 1 cup whole wheat flour
– 2 eggs
– 1 tbsp melted coconut oil (or melted butter)
– 1 tsp baking powder
– 1/4 tsp cinnamon
Directions:
– Preheat oven to 350°F
– Mix all ingredients in a large bowls and scoop into a greased non stick muffin tin.
– Cook in a 350°F oven for about 25 minutes or until cooked through. Let cool.

For All:
To Freeze: Once cooled completely place in a large freezer bag and be sure to lay flat in a single layer so they don’t stick together while freezing.
Reheating: Heat in microwave for 30-60 seconds or until heated through. (Make sure to test centre before feeding to baby! The middle can be very hot even if outside it’s cooled!)
