This entire recipe is only 4smart points on WW Freestyle!
If you add regular peanut butter just account for the smart points. Each tablespoon is 3 smart points!!
A great meal plan and prep option for brunch, lunch or dinner!! Loop
Ingredients :
Peanut Chicken Stir Fry Recipe By Risa – Low Fat Recipe
4-5 or so cups of your favourite raw vegetables ( I used peppers, zucchini, broccoli, bok Choy)
4 chicken breasts (or as many or less as you want)
Optional 1/2 cup or more baby corn
1 large vidalia onion
4 tbs or more Pb 2 (peanut butter powder or your choice of regular peanut butter) 2sp. 2 for the chicken and 2 for the veggies
6 tbs or more water
1tsp or more garlic and onion powder
1 tbs or more all purpose seasoning ( can use a chicken seasoning too)
2 or more tbs fresh ginger
Sprinkle of Pink Himalayan salt and pepper
1tsp or more smoked paprika
1tbs or more minced or fresh garlic
Frank’s Hot sauce or chili peppers ( optional
Sprinkle of Soy sauce or Worcester sauce is optional
Olive Oil spray
Directions :
In a large skillet spray it well with olive oil spray can
Put oven on a medium high heat
Add sliced onion and ginger to the skillet
Cut chicken into chunks.
Season chicken with all purpose seasoning, garlic, onion powder, paprika, salt and pepper
Add chicken to the onion mixture
Stir frequently
Add 3 tbs of water to the pb2
Add pb2 sauce to the chicken
Once chicken is completely cooked add veggies
Repeat by adding 3 tbs of water to 2 tbs of pb2 ( or add real peanut butter) then pour over vegetables and chicken
Add water chestnuts and baby corn
Add more salt, hot sauce ( optional)
You can add soy or Worcester if you want!
Cook until your vegetables are cooked but not over cooked. They should have a bit of a crisp!!!
Optional :Add more pb2 with water or real peanut butter to drizzle over meal !!!

Tip…. You can add konjac rice or any noodle too!!!
Keep in a sealed container in the fridge for a few days or keep in the freezer.
