🌶 Burrito Bowls
Ingredients:
1 cup Brown Rice
1-2 Sweet Potatoes
1-2lbs Ground Chicken
Thrive Market Taco Seasoning
1 Tomato
1 Onion
Mushrooms
Avocado
Cheese/Vegan Cheese
Salsa

Preheat the oven to 400. Cube sweet potatoes + toss in avocado oil/salt/pepper. Put in oven for 12-15 min, flip and let bake for another 10 min. While oven is pre-heating for sweet potatoes, start the brown rice. Brown rice takes around 40 minutes so I’ll start that and begin sautéing the mushrooms and diced onion together with avocado oil and salt/pepper. Put aside and start the ground chicken. When it’s done, drain the meat, add the taco seasoning and water. Chop tomato and avocado. Go down the line buffet style and add everything into your bowl!

🍓 Strawberry 🥥 Coconut Vegan Ice Cream Recipe
1 can unsweetened coconut milk
2-3 cups of frozen strawberries
2-3 teaspoons coconut sugar

Blend ingredients together and taste. Add any ingredients you need more of. Put in tupperware and pop in the freezer for an hour! Try not to leave it in there any longer or you won’t be able to scoop it out 🙂
