This classy Tilapia dish will be your show stopper. It’s easy, healthy and refreshing. This recipe required absolutely no hard work or too much time in the kitchen. This combination of quinoa and tilapia is very good because you get your carbs, and protein which completes your meal.
INGREDIENTS-
1 cup quinoa
1/2 cup chopped tomato
1/2 cup chopped onion
1/4 cup chopped cilantro
1/4 cup green pepper
1/4 cup chopped cucumber (optional)
2 tilapia fillet
2 tablespoons blackened seasoning
For Dressing-
2 Tbsp olive oil
2 Tbsp lemon juice
2 Tsp salt
1 Tsp black pepper
1 Tsp paprika
1 Tsp Turmeric
INSTRUCTIONS-
*In a pan with 2 cups water add quinoa and cook it. Once cooked keep it aside to cool.
*Meanwhile, in a bowl add tomato, onion, cilantro, green pepper, cucumber and mix well.
*Once the quinoa is cool add it with rest of the things in that bowl and mix well. Pour the dressing, mix well and refrigerate it.
*Now rub the blackened seasoning on both sides of the fillet and cook it 2 minutes each side in a pan over medium heat with 2 teaspoon olive oil.
*Once it’s done, take a plate spread some quinoa salad and place the tilapia on top.
*It’s ready to serve.
