SUNDAY: Leftovers
MONDAY: Chicken Fajitas/ Fajita bowls
RED RICE- from this cookbook:
Crockpot Refried Beans:
TUESDAY: BBQ Pulled Pork Sandwiches
German Style Slaw:
1 bag shredded green cabbage
2-3 chopped scallions, both white and green parts
1/2 a green bell pepper, sliced thin or diced
2 to 1 ratio oil to vinegar, I use just under 1/4 C Apple cider vinegar and 1/2 C canola oil
2 Tbsp granulated sugar (more or less to taste)
Salt//pepper
Mix everything and eat it up! Does not store well overnight but can be made ahead a few hours and refrigerated.
WEDNESDAY: Crockpot Mississippi Roast
2-3 lb rump roast or chuck roast
Enough water to coat bottom of crockpot
1 packet each of Ranch seasoning mix and Au Jus gravy mix
4-5 pepperoncini peppers and a splash of juice (add more if you like extra heat)
4 Tbsp unsalted butter
Place everything in crockpot and cook on low 8 hours. You can flip half way through. Cut up and serve over mashed potatoes.
THURSDAY: Sherry Mushroom Chicken
