This hearty side dish is perfect for all of you rice-addicts out there. It’s a rich, super-flavorful cauliflower rice pilaf laced with toasted almonds, tangy dried cranberries, and nutrient rich spinach, to keep your gut bugs – and your tastebuds – happy.

What You’ll Need –
1 lb cauliflower rice
2 tsp coconut oil
½ onion, finely chopped
1 tsp turmeric
1 tsp curry powder
1 cup skin-free slivered almonds
1 cup unsweetened dried cranberries
½ cup coconut milk (from a can)
1 cup baby spinach

What To Do –
Heat the coconut oil in a pan, and add your onion and spices.
Then, cook until the onion has softened.
Next, go ahead and add your cauliflower rice and almonds to the pan. Cook for approximately 3-4 minutes.
Throw in your cranberries and coconut milk, and stir through until cauliflower is cooked.
Finally, toss in your spinach, and allow it to wilt.
