I created this YouTube Channel to share my experience with losing 70 lbs in 2020 on a whole food plant based diet. I came across Dr. Mcdougall and the Starch Solution in May of 2020 and was able to do a deep dive to learn about plant based living and plant based weight loss. It has changed my whole life! By learning about calorie density, I was able to use plants to lose the excess weight, fix my hormones, heal my body and am now living my most healthy life. I was able to this with a full plate, never feeling hungry or dissatisfied. I created this channel to share tips, tricks, and recipes that I wish I could have found when I was just starting my journey.
This video is a what I eat in a day video sharing what I ate to lose 70 lbs in 2020 and how I continue to eat to maintain that loss effortlessly.

Savory Steel Cut Oats
1 Cup steel cut oats
3 cups water
Shredded carrots
1 Diced tomato
1 Shredded zucchini
1-2 Kale Leaves
1/2-1 Cup of black beans
1/4-1/2 cup Plant Provision “cheese” sauce (recipe in this video:
Place all ingredients in a pot on the stovetop, and cook down to your liking. Add in any seasonings you like, I like balsamic vinegar, sriracha, garlic powder, onion powder, paprika, chili powder, turmeric, red chili flakes. Anything you like! Don’t be afraid to try a few different things!
Lunch:
Leftover salad and Hawaiian Sweet Potatoes. How I cook those is in this video:
Dinner:
Steamed Veggies with cheese sauce, with Sushi rolls.
To make sushi rice:
4 cups of brown rice, 5 cups of water. Cook in ninja foodi on high pressure for 16 minutes and let naturally release for 15 min before releasing pressure. Sprinkle on some rice vinegar and fluff the rice and let cool slightly. Prepare vegetables to be placed in rolls, I like mango, spring mix, cilantro, cucumber, and carrots. Place rice on nori sheet, use wet fingers to spread the sticky rice easily. Place preferred veggies on nori roll and roll up, wet edge (as pictured in video) to keep the nori sheet from unrolling. I like to dip it in Teriyaki balsamic from California Balsamic (only available in US- if you purchase please tell them I sent you!) or ginger balsamic mixed with regular balsamic is delicious too.
