Keto Pizza Muffins | Keto Snack Recipe Ideas

Pizza muffins (makes 9 muffins)
Ingredient
250 g Mozzarella, grated
1.5 tbsp cream cheese
2 eggs
1/4 tsp salt
100 g Ground Almonds
Toppings:
Olives
100 g Chicken tikka chunks
Red onion
Red Pepper
Or topping of choice
Cheese of choice or Mozzarella
Method
1. In a bowl, which is suitable for the microwave add 250 g of grated mozzarella.
2. Add 1,5 tbsp cream cheese and microwave for 30 seconds.
3. Mix and microwave again for 30 seconds.
4. Repeat microwaving and mixing until mozzarella is properly melted.
5. Break two eggs into a bowl and beat.
6. Mix melted mozzarella with beaten eggs using a hand mixer.
7. Also add 100 g ground almonds and 1/4 tsp salt.
8. Mix until batter is smooth.
9. Preheat oven to 200 degrees celsius top and below heat and line a muffin tray with muffin paper.
10. Add batter into muffin mold and press surface lightly. Bake for 18 minutes.
11. Mix around 100 g chicken chunks with 1/2 to 1 tsp tikka masala. (Alternately use seasoning of choice).
12. Fry chicken chunks in 1-2 tbsp oil of choice until they are fully cooked.
13. Top muffins with tomato sauce and grated mozzarella.
14. Top pizza muffins with favourite toppings of choice and a little more cheese.
15. Bake for another 14-16 minutes. Let muffins cool down for 5 minutes at least before taking them out of the molds.
Skip step 11 and 12 if u don’t want to top your muffins with chicken.
