One evening we visited an Amaranthus (thotakura) farm.
We came across these n number of veggies farms couldnt resist halting at this thotakura farm.. it was soooo fresh…
came home and cooked yummylicious THOTAKURA BIRYANI..
lets get into the recipe..
Ingtedients:
Amaranthus(Thotakura)-5 bunches
Onion- 1 large (slits)
Chillies- 6 (slits)
Turmeric- 1 tp
Chilli powder – 2 tp
Dhaniya powder – 1 tp
Roasted cumin powder – 1 tp
Ginger garlic paste – 1 tp
Salt- as per taste
Chicken- 1 cup( 250 gms)
Rice-2 cups
Water- 4 cups
Process:
1. Clean Amaranthus and chop finely..
2. Place pan/ pressure cooker on stove heat.
3. Add 6 tps of oil or ghee as per your taste and add all the ingredients as said above.
4. Fry Amaranthus and other ingredients for 7 minutes and add raw rice.
5. Stir fry for 2 mts and add 4 cups(4 1/2 cups if required as we add chicken) of water and close the lid.
6. Wait till 2 whistles and stop the stove..
7. Tadaaa… Finally the hot fuming yummy thotakura biryani is all ready to serve!!
8. Serve with fryums, curd and some vegetable salad(onion, tomato, kale,lemon,coriander)..
