Welcome !! Today I am showing you creamy white chicken enchiladas that are low carb and healthy!! That’s right low carb enchiladas !!

Ingredients for one batch of enchiladas :

2 cups of shredded chicken
1/2 cup of Pace or your favorite salsa
1 tsp of chili powder
1 tsp of cumin ( Divided) 1/2 in chicken mix, 1/2 in sauce
About 8 tortillas ( I use low carb ones)
2 tbsp. of butter
2 tbsp. of flour
8 oz. of sour cream
1 1/2 cups of sour cream ( Lite or Fat Free )
1/2 tsp salt
1/2 tsp of pepper
1/2 cup of pickled jalapenos
2 cups of chicken broth
1 1/2 cups of your favorite lowfat cheese ( 1 cup in sauce, 1/2 cup on top)

Nutrition Facts for One Enchilada( Calories based on tortillas I used, assuming you made eight, also used bone broth, everything the same as mine. )
Also for those who use my fitness pal the recipe is saved under Mrs. Sonia Elaine Healthy Enchiladas so you can just copy it. You could lower the fat by using fat free cheese and fat free sour cream or just switch out one of them.
