In today’s video I’ll be sharing with you some of my favorite easy vegan meals that I make in a typical week. For breakfast, I make a veggie-filled tofu scramble with fried potatoes on the side. Lunch is a pizza wrap for anyone looking for a quick and easy, on-the-go lunch. Lastly, for dinner I whip up a hearty pasta with a vegan “chicken” vegetable butter sauce. I’ve listed all ingredients below, so don’t worry about fast forwarding through the video to find the list.
Now let’s get cooking!
Breakfast: Tofu Scramble w/ Fried Potatoes
-1 or 2 blocks of FIRM tofu
-Oil for the pan
-1 head of broccoli
-1 medium slicer tomato
-1 or 2 large potatoes
-Nutritional yeast (as much as you like)
-Salt + pepper
-Cayenne pepper
-Paprika
-Parsley
(top with hot sauce, ketchup, or whatever you like!)
Lunch: Pizza Wrap
-1 tortilla
-1 scoop of Trader Joe’s Vegan Cream Cheese
-Fresh spinach
-Sliced cherry tomatoes
-Morning Star Farms Chik’n Strips
-Marinara sauce of your choice
Dinner: Pasta w/ Vegan Chik’n Vegetable Butter Sauce
-Pasta noodles of choice
-Vegan butter of choice
-Morning Star Farms Chik’n Strips
-Fresh parsley
-Sliced cherry tomatoes
-Asparagus
-Vegetable broth
-Garlic
-Salt + pepper
-Follow Your Heart Parmesan Cheese
