Delicious stuffed bell peppers. these make a perfect lunch meal prep for the week. Heat them up in the microwave when you are ready to eat.

Stuffed Bell Peppers:
8 bell peppers (any color)
2 cups cooked quinoa
1 can black beans
1 can corn
shredded cheddar cheese
1 pound ground beef

cook peppers in oven at 350 for 20 minutes. Prepare all other ingredients. Fill peppers with mixture and top with shredded cheese. Cook for 20-25 minutes. Portion in to meal prep containers. Enjoy!
