Beetroot and Rocca Salad
Ingredients
1 cooked beetroot
200g rocket
1 cup cooked quinoa
200g lettuce
2 pcs capsicum

Dressing
2 tbs olive oil
2 tbs balsamic vinegar

Instructions
1. Remove stem and leaves from beetroot, cooked, peeled and quarter beetroots. Toss
2. Toss rocket, beetroot, capsicum, lettuce, and quinoa together in a large bowl. Add nuts and feta cheese (optional)
3. Combine dressing ingredients through the salad.
