GARLIC POTATO CHIPS by Vineet Bhatia
Ingredients:
400g waxy potatoes, washed and sliced with the skin on into 1/2 cm thick slices. Wash in water to remove the starch and dry on absorbent paper
3 tablespoons olive oil
2 cloves garlic, crushed skin on
40g butter
30g dried coriander (fresh will also do)
Heat oil in a heavy-bottomed pan to low heat and arrange the sliced potatoes.
Cool till they are golden brown on each side.
Add salt, crushed garlic, butter and coriander leaves and toss the potatoes.
Reserve the extra oil and butter, it has plenty of flavour and can be used in other dishes.
