1) Omelet
 
INGREDIENTS
• 2 large potatoes • 1 cucumber • red pepper • 1 spring onion • 3 eggs • 1 tsp salt • ½ tsp black pepper • 60 g flour
 
METHOD

Cut the pepper into small strips. Cut the spring onion into small pieces. Grate the potato and cucumber. Mix all the vegetables in a bowl.
Beat three eggs and pour into the bowl with the vegetables. Add salt, pepper and flour.
Mix well. Cook in a frying pan with a lid, flipping over halfway.

2) Omelet sandwich
 
INGREDIENTS
• Sliced bread • Onion • 1 red pepper • 50 g shredded mozzarella • 50 g Grated Parmesan • 6 eggs • 1 tsp salt • ½ tsp black pepper • flour -60 g • 100 g chopped ham • Parsley
 
METHOD

Beat the eggs, then add onion, bell pepper, diced ham and mix. Add mozzarella cheese, Parmesan cheese, parsley, salt, pepper and mix again.
Cut the edge off 6 slices of bread, place the slices on a baking sheet and pour the egg mixture on top.
Bake for 25 minutes at 180ºC (356ºF) Cut into small pieces to serve.
