Ingredients
2 medium cauliflower heads, cut into bite size
3 tablespoons extra virgin olive oil and 1//3 cup for dressing
3/4 teaspoon salt
1/4 teaspoon ground pepper
2 tablespoons champagne or white wine vinegar
1 tablespoon of Dijon mustard
Pack of Arugula
Red onion thinly sliced
Shredded Parmesan cheese
Preheat oven to 425F. combine cauliflower with 3 tablespoons of oil 1/2 teaspoon salt and pepper. coat and roast for 30 minutes stirring a few times.
Combine vinegar, mustard and the remaining salt in a small bowl. Whisk in 1/3 cup of oil. Combine cauliflower, arugula, and onion in a large blow. Add dressing toss. Add shredded parmesan cheese and serve.
