RECIPES: * remember these are just ratios- make as much as you need to eat!! *
TOFU OVERNIGHT OATS (2 SERVINGS)
85g tofu
2/3c soy milk
2 dates or 2 tbsp sweetener (if you like it sweeter, add more!! coconut sugar makes it really sweet too like dessert :))
1 tbsp lemon juice
1 tbsp maple syrup
1 tsp vanilla
2 cup oats (1 c in each container)
2 tbsp chia (1tbsp in each)
Optional: 2 tbsp cocoa powder for chocolate version
VEGGIE MACARONI PASTA SALAD (2-3 servings depending on how hungry of a person you are!!)
4c cooked macaroni (around 1 220g box)
1/2c red pepper, diced
1 c celery, diced
1/2c grated carrot
1/4 green onion
1 C silken tofu
2 tbsp sweetener or 2 dates
2 tbsp apple cider vinegar or white wine vinegar
2 tbsp lemon juice
Handful fresh dill
¼ tsp garlic powder
1-2 tsp mustard of choice (i use dijon)
1 tbsp nutritional yeast
½ tsp paprika
Black pepper, salt to taste
SWEET POTATO FALAFELS (makes approx 16 small balls)
1 can chick peas (300g)
1 cup sweet pot (300g)
2 garlic cloves
1/2c cilantro
½ onion
1-2 tsp cumin
½ tsp sriacha
1 tsp tumeric (OR MORE I ALWAYS ADD IN HALF A TSP MORE)
1 tsp black pepper
1 tsp salt,
2 tbsp tahini
Flour for rolling
